Watermelon, Feta and Arugula Salad

What's with all the watermelon salads? If you are a cooking magazine addict like I am, you probably noticed that watermelon is the latest fad. Everywhere I look , I seem to find a watermelon recipe. I am not complaining. I love watermelon so bring on more recipes. When I was pregnant with my daughter, watermelon and burgers were my food of choice. Believe it or not, I would drive through Wendy's and Burger King all in the same lunch hour. Keep in mind, I typically am not a fast food lover. Then I would wash down the greasy burgers with a slice of icy cold watermelon. And the husband would rid the car of all the old fast food bags. Luckily this bad habit only lasted for a few months.

But back to the icy cold watermelon. I just had some a few minutes ago. Is there anything better on a hot day. Or how about a piece after coming back from a four mile run? I have always eaten it plain but it was due time to make a salad. So this is how you do it.

Gather these ingredients:
watermelon
a few handfuls of arugula
olive oil and balsamic vinegar
salt and pepper
crumbled feta cheese
a handful of fresh mint leaves, chopped

Sliced the watermelon into some nice uniform pieces. Toss the arugula with some olive oil and balsamic vinegar and season with salt and pepper. Place the watermelon on top of the arugula and sprinkle with the feta and chopped mint.

Can it be any easier? This is a great salad to take to a party because it will draw up good conversation. And when you try it, you'll love it. Next time, I'm switching the mint for basil.

I'm not surprised that everyone is jumping on the watermelon bandwagon, they are the perfect summer fruit, cool and refreshing. I'm sure this salad tasted superbly sweet, salty, and crunchy.

I've made Nigella Lawson's watermelon, feta and black olive salad before, so I can imagine just how good this must taste.

Salad does look good. Yes, I have noticed watermelon seems to be in style right now.

I LOVE watermelon and feta. I almost made this the other day, but my watermelon, albeit sweeeeet, is a little mealy. So it became drinks and popsicles instead.

I was the same when I was pregnant with my son! I couldn't get enough watermelon and fast food!

Sounds delicious Lisa. We bought a huge watermelon last week and I was the only one that ate it. It took a few days but I ate the whole thing....would be nice to try this in a salad next time!

I love the sweet and salty combo of the watermelon salads that have been all over the food world lately.

It never crossed my mind to make a salad like that, although cantaloupe is good in savory dishes. Why not watermelon! Thank you for broadening my horizon today.

Tis the season...I made this exact salad last week (only without arugula...so I guess not the EXACT salad!)

Watermelon and Feta is a beautiful thing. Next time ask for Greek Feta and see the difference.
