Marinated Cranberry Beans


The lazy blogger has returned! I did not mean to go this long without a post but I guess it just happened. But in the meantime I have been attending to another blog for the new job that I have. Take a peek here if you're into fashion. I also want to thank all my wonderful blog readers for ranking my cheese platter. I received third place and won an Ile de France cheese basket. What foodie doesn't want cheese?

Last week, we went to the Collingswood Farmers Market and I found these beautiful looking beans. Pretty! These creamy, slightly nutty beans are great many ways but I decided to make them in a salad. They can be served hot, cold or at room temperature. Once they are cooked, they look similar to a pinto bean. These beans were a great farmers market find. Have you ever had them?






Marinated Cranberry Beans

1 bag of cranberry beans, shelled
1 cloved minced garlic
2 TBS fresh chopped basil
3 TBS chopped pimentos
1 few TBS olive oil
1 to 2 TBS balsamic vinegar
salt and pepper to taste

Cook the shelled beans in a inch or two of salted water. Simmer for about 15 minutes or until beans are tender. Mix together drained beans, garlic, basil and pimentos. Add olive oil, vinegar, salt and pper to personal taste. Refrigerate overnight and serve at room temperature.

Love salads like this! I've never seen these kinds of beans and I always shop our farmer's market.

At a cooking demo class I went to this past summer the chef used pink eyed peas, which I'd also never heard of, but they were very similar to black eyed peas and were in pods just like this, but the pod was purple. The salad was de-lish. I love trying new stuff like this. Oh, I just remembered it was a pink eyed pea and corn succotash.

Congrats on the 3rd place cheese tray! I voted. Feel like I should get a sticker that says "I voted." just kidding.

I had never heard of cranberry beans until a few weeks ago when I saw them at a grocery store. Marinating them sounds perfect!

This salad sounds divine. I have never had those beans before. But Ive been to that flea market and I so enjoy it.

I've actually had cranberry beans before...but only in the last couple of years. I only find them at the farmer's market...I am going to be on the lookout b/c I want to try this recipe!

I have never heared of cranberry beans, I thought you had gonne out of your mind and mix beans with cranberries, lol! But they do look great!

Congrats on your cheese basket award! That's terrific! Your cranberry beans look great. I've seen the actual been before, but didn't know the name. I love dishes like this! YUM!
